Asafoetida is the dried latex exuded from the rhizome or tap root of several species of Ferula, perennial herbs of the carrot family. It is produced in Iran, Afghanistan, Central Asia, northern South Asia, and Northwest China. Different regions have different botanical sources.

asafoetida, also spelled asafetida, also called hing spice, gum resin prized as a spice in India and Iran, where it is used to flavour curries, meatballs, and pickles. Acrid in taste, it emits a strong onionlike odour because of its organic sulfur compounds.
